It doesn’t matter what team you’re rooting for, this is something we can all agree on: Buffalo Pork “Wings”! Based on standard Buffalo Chicken Wings, these pork “wings” are taken to the next level with bacon and blue cheese crumbles. We think this recipe is perfect for game day and an absolute "keeper". Ingredients:
4 1-inch thick boneless pork chops
1 package thin-sliced bacon
8 ounces of Stilton blue cheese, crumbled (or more to taste)
1/2 cup Buffalo sauce (we like Frank’s Buffalo sauce found in grocery stores)
4 T butter
1/2 - 1 clove garlic chopped or grated
Blue cheese dressing for dipping
Celery leaves, chopped to sprinkle on top of finished dish and any leftover blue cheese crumbles
Fresh carrots and celery cut into sticks
Instructions:
Preheat oven to 375. Line a sheet pan with parchment paper. Cut pork into approximately 1-inch thick pieces sliced the length of the chop.
Place a piece bacon on parchment, then add several blue cheese crumbles on top and wrap around pork in a spiral, continue adding blue cheese as you wrap the bacon around the pork. Tuck in a few more crumbles under the bacon if desired.
Bake until the bacon is crisped to your liking (approx 35 min) and the internal temp of the pork is 145 degrees F. Turn pork “wings” during cooking if necessary for even browning.
While the pork cooks, heat sauce pan on low to medium heat. Add butter, garlic and Buffalo sauce, simmer on low for several minutes after butter has melted. Reheat before drizzling if necessary.
Once cooked, add skewers to wings if desired – easier for dipping. Place on serving dish and liberally drizzle Buffalo sauce, then sprinkle celery leaves and add any remaining crumbles of blue cheese over the “wings”. Serve with celery, carrots and blue cheese dressing and ENJOY!
