Franc Blanc Vinaigrette with Super Simple Herb Salad


The most basic salad dressing is a combination of an acid and oil. This play on a simple vinaigrette is a fun, super delicious way to add pizzazz to your greens! We love the addition of our Franc Blanc and this recipe is how we like it. But remember you’re the boss of your dressing! So, play around. Add more wine, vinegar or oil, etc., until it tastes just right to you. Once you find your sweet spot, write it down for next time. Happy dressing adventures!


We recommend pairing with our Super Simple Herb Salad (also below) and either our 2023 Franc Blanc or 2021 Toro Tempranillo/Grenache blend!

Franc Blanc Vinaigrette


INGREDIENTS:


  • ¼ c Gård Franc Blanc white wine

  • ~ ¼ c extra virgin olive oil (add slowly, to taste, as each olive oil can be quite different and you don’t want to overpower the Franc Blanc - it's much softer than a vinegar)

  • 1 Tbsp champagne vinegar

  • 1 small shallot (approx 1 Tbsp), finely minced

  • 1/4-1/2 tsp Dijon mustard

  • 1 small clove of garlic, grated

  • drizzle of honey, to taste

  • Salt & pepper


DIRECTIONS:


  1. Pour champagne vinegar into a jar. Add shallot and let steep in vinegar for 10 min or so to soften the taste of the shallot.

  2. To the jar, add garlic, salt, pepper, Dijon, Franc Blanc and honey. Shake or stir together. Slowly add the olive oil in a thin stream while whisking. Taste and adjust.

  3. Drizzle over your salad of choice!



Super Simple Herb Salad


INGREDIENTS:


  • Baby lettuces of choice - we used a baby red butter mix and spring mix; arugula would also be great to add

  • Manchego cheese

  • ¼ c Marcona almonds, chopped

  • Fresh dill and parsley, roughly chopped, to taste

  • Optional: 3-4 oz prosciutto or spec, very thinly sliced


DIRECTIONS:


  1. If using prosciutto, heat oven to 375°. Place prosciutto on a parchment lined pan. Cook for approx 10-15 min. Check frequently after 10 min so it doesn’t burn. Place on a rack to cool. It will get crispier as it cools. 

  2. Add greens together in a bowl. Add almonds and herbs and mix together a bit with your hands.

  3. Shake Franc Blanc Vinaigrette well and pour over salad, to taste. Toss well. Shave the Manchego (we used a carrot peeler) on top and break the prosciutto into bite size pieces over the greens.

  4. Serve with a beautiful glass of Franc Blanc or Toro!
