Herby Tomato Grilled Crostini
Recipe by Tanya Miller
Serves: 4-6
Recommended wine pairing: 2023 Sauvignon Blanc & 2023 Rosé
INGREDIENTS:
~12 oz heirloom cherry tomatoes, halved or quartered depending on size
1 pkg Garlic & Herb Boursin cheese
¼ c goat cheese
2 Tbsp extra virgin olive oil
2 Tbsp red wine vinegar
1 tsp balsamic vinegar of Modena
1-2 cloves garlic, chopped or grated
1-2 tsp fresh basil & dill, chopped (more if you love herbs!)
Optional: Italian parsley, finely chopped
Loaf of artisan bread, sliced
1-2 Tbsp avocado or other high heat oil
Kosher or sea salt to taste
Garnish: Flaky salt
DIRECTIONS:
To a small/medium serving bowl, add tomatoes, olive oil, garlic, salt and vinegars - mix together.
While tomatoes marinate, slice bread to desired thickness. Brush with the high heat oil on both sides.
Combine the Boursin and goat cheese together in a small serving dish and stir until well combined and creamy.
Preheat barbecue or grill pan to med-high heat. Once heated, place bread on the grill and sprinkle lightly on one side with salt. Once it has reached your desired level of golden/char, turn over and repeat. Remove from grill and place on a platter.
Add herbs to the tomato mixture. Serve with cheese mixture and crostini. We recommended serving tomatoes, cheese and crostini separately so that each guest can make their own and the crostini stays crisp and fresh. Sprinkle with flaky salt and a drizzle of extra virgin olive oil, if desired.
Serve and enjoy with a chilled glass of our beautiful new 2023 Sauv Blanc or our 2023 Rosé of Grenache!
