We love cheese and we love easy appetizers! This baked brie has exactly four ingredients and one of them is salt. That's about as easy as it gets! Plus, the warm cider spices are perfect for fall and into winter. Going to a holiday party? Make it ahead and bake it when you get there.
Recommended pairing: Chardonnay or Merlot
Ingredients
8 oz wheel or wedge of brie
4-6 oz apple cider fruit spread such as the one you see here from Trader Joe's, Stonewall Kitchen Apple Cider Jam, or Oregon Growers Apple Butter (also available at Whole Foods)
3/4 c whole pecans (can substitute walnuts or spicy pecans)
salt to taste
Instructions
Preheat oven to 350. Place brie in an oven-safe dish, top with fruit spread, pecans and a sprinkle of salt.
Heat on top oven rack for 10-15 minutes or until the cheese gets soft and oozy in the center. If you notice your pecans are getting pretty dark but the brie isn't soft, cover with foil and continue baking.
Serve with crostini, crackers or sliced baguette and a bottle of Chardonnay or Merlot! Easy, peasy, right?!
Note: In our experience, "lite" brie will work with this recipe but it won't ever get to that oozy state. Bake about 20 min, covered for half that time. Still tastes delicious, just won't have that melted brie texture we love.
