Stilton-Stuffed Cockroach Clones

Makes: 18 halves
Suggested wine pairing: 2021 Skål Sparkling Rosé or 2021 Boneyard
INGREDIENTS:
About 9 dried dates, cut in half lengthwise (look for plump ones!)
1 pkg of prosciutto
¼ lb Stilton blue cheese, goat cheese, or a combo of both
Optional: Twigs (we grabbed some from the yard), realistic roaches for decoration
INSTRUCTIONS:
If using Stilton, cut it into pieces the length of the date. Lay pieces on a parchment lined pan, plate or cutting board. Make sure the pieces are not touching and freeze for about an hour. This helps the cheese to stay firmer and not melt quite as fast when you cook it, which can result in losing much of the cheese onto the pan. If using goat cheese only, you can skip this step.
Once the hour is up, roll or stuff cheese into date halves. Cut prosciutto slices in half lengthwise into 2 pieces. Roll each date up in a half slice of prosciutto and place on a tin foil lined baking sheet.
Preheat your oven to broil for a couple of minutes. Place the pan in the oven about 4 inches from the broiler. Broil approx 2 min for the first side. Remove the pan and turn them over and put back in the oven for 30 sec to 1 minute - depending on your oven. Watch closely so you don’t burn your critters!
Optional: If you want to add little twigs, poke a hole with a skewer into the top of the roaches and then put the twig in the hole. If you’re using realistic roaches as decoration, place around the plate - we made sure at least one was upside down - lol.
Serve warm or at room temp with a glass of 2021 Skål Sparkling Rosé or 2021 Boneyard!
