Tanya's Tzatziki


Tzatziki is dip or sauce that comes from the cuisines of Southeastern Europe and the Middle East. Main ingredients usually include: Greek yogurt, garlic, cucumbers, salt, and sometimes feta, lemon juice, dill, mint, parsley, thyme.



Tanya's Tzatziki


Recipe by Tanya Miller, makes about 2 cups


INGREDIENTS:

  • 1 ½ c Greek yogurt or sour cream

  • 1 cup cucumber, shredded or finely chopped (If you are able to get your hands on Persian cucs - do it. They have a wonderful flavor and crispness!)

  • 2-4 cloves garlic, grated - if you love garlic, go for more

  • Fresh dill, chopped - to your liking, recommended 1-2 Tbsp

  • ½ tsp salt divided

  • 3 oz feta, preferably Greek or European style (look for sheep/goat milk instead of cow’s milk)

  • Juice of half a lemon - again, taste it and make it to your liking! A recipe is just a guide…


INSTRUCTIONS:

  1. Finely grate cucumbers on an old kitchen towel and sprinkle with ¼ tsp salt. This helps draw out excess liquid that you will squeeze out with the towel. If using Persian cucumbers, we highly recommend grating half and finely dicing the rest. It makes for great texture! If dicing cucs, place them in your mixing bowl with the yogurt or sour cream. If using shredded cucumbers, squeeze out the excess liquid from the shredded cucs and add to the rest of the dip.

  2. Add garlic, add lemon juice and salt, dill and feta. Stir to combine and be sure to taste.

  3. Serve with kefta, grilled chicken with Mediterranean spices, chips, pita triangles, veggies, or whatever you like!
